Strat by heating up some water to 185F (no hotter). We love the Stagg kettle for precise temperature adjustment.
We like making single cups of Green Kokoro. Making a pot? See instructions below.
Place a strainer on top of any cup/tumbler/mug.
Scoop a heaping tablespoon (5-6g) of genmaicha into the strainer.
Pour about 6 ounces (180ml) water over the leaves and steep for one minute.
Making a pot
Scoop a heaping tablespoon (5-6g) of genmaicha into your cup/teapot.
Gently pour about 6 ounces (180ml) water over the leaves. Don’t agitate the leaves, just pour.
Steep for one minute.
Pour the tea into your cup (or cups, if you’re sharing).
Pause your life for a few minutes and really taste it. Relax and do nothing else.
Try to evaluate the experience. Too strong? Back off a little on the tea quantity, steep time, or both. Too weak? Add a little more tea next time or steep for longer.
