This matcha is pure pleasure -- it's like drinking light infused with chlorophyll. It bestows a brothy umami torrent that continues long after swallowing (up to several full minutes of finish), and its ultra-fine texture and overall quality mean that it whisks up into gorgeously thick clouds of emerald froth that remain in the tumbler long after the liquid is gone.

Finally, I had the chance to compare the newest blend purchased, HIKARI with the blend I've been drinking forever, SATOSHI. There was a clear winner for me and that was the SATOSHI blend. It is more delicate and sweeter and does not leave an aftertaste. Drinking the SATOSHI still reminds me most of the two years spent in Japan studying at Tokyo University and mostly of my travels to KYOTO where I lived in a ryokan (a traditional Japanese inn) where I was served matcha daily in the morning that was prepared in front of me by the Japanese inn keeper. The price is basically the same, so the next time a purchase needs to be made with BREAKAWAY MATCHA, I know what my choice will be! 抹茶を飲もう! (Let's drink some matcha now!)

I really enjoyed this matchas as one of my ethereal flights choices. Today I compared it with the Satoshi and it couldn't be more different. A more robust crema with lots of umami. I make my matcha thick and this definitely had the texture I love. A fantastic matcha and would be on my list to have on hand daily if I came into some more money than I have now! Yum!

my morning ritual

I love tea and known to travel all over the world to find good tea. Blend Hikari is number one on my list. Not a morning person but when I know that I will be rewarded with a fine, smooth tasting tea, I got up with energy. Hikari gives me mental clarity and keeps me alert all day without the ups and downs like coffee. Love it, love it. it is expensive but if you drink coffee from store, it is not expensive and you feel healthier without the added sugar and cream. It is a good investment for your health.

The Finest Matcha

I have been a customer of Breakway Matcha for over a year but this was my first purchased into the ultra premium line. It was an early Christmas/birthday present to myself and without any regret. I made sure upon preparation I had the water brewed and the right temperature 160 degrees, no sifting was required. My palate is not trained to describe the various flavors many customers describe, I go by therapeutic effects which can also be subjective.

After about 30 minutes of drinking the full cup, a very prominent peace of mind almost zen like feeling overcame me. I felt very calm but extremely present and focused. The stress I had accumulated during the workday became tolerable. There was a noticeable increase in energy which allowed me to multi-task to get more things done.

The King of Matchas!

This is definitely the best matcha company in the world and the best matcha tea I've ever tried. All their matcha teas are very good quality. I tried Blend Hikari, Daphne, Se, 100, Rikyu, 99, Hyperpremium Organic.... is it all? I tried a lot. :) I can't drink some regular matcha anymore, even if they call themselves "specialists of ceremonial grade matcha". Every blend of Breakaway matcha has its own unique umami, I absolutely adore each of them. My favorite is Blend Hikari because it is a matter of taste. I wish you all the best Breakaway matcha! I have been drinking 99 daily since discovering Breakaway. I have now tried every blend from 97 through Daphne. They are each delicious in their own way. Most recently I tried Hikari for the first time as part of a sampler along with 97, 100,and SE. It is exceedingly smooth, not as dark in flavor as I would describe Daphne nor does it have the hint of sweetness that I found in Rikiyu. Smooth, rich, light filled. For me it is perfect blend for indulging in some quiet, contemplative moments.

I've just started with the matcha experience and am thoroughy enjoying this Blend Hikari. Beautiful green liquid, which looks as creamy as it tastes. Every day I enjoy two to three cups of Matcha.
I try to choose the BEST of the BEST.
With this one, I felt almost in Paradise!
The smell is perfect, then there is a bit chocolate, toffee taste and in the end a "fume" taste that stays for a while, just to remind you that after all another cup could be an obligation.

You simply snip off the end of the bag and transfer the matcha into the jar. Always store your matcha cold (in your fridge), in black glass.

Your Questions Answered

Mainly because the farmers and processors care so much; their processes take longer, require more steps, and are just harder. They’re pretty obsessed with producing Japan’s tastiest and healthiest matcha, and we don’t mind paying them well for the extraordinary product they produce. Rarity comes into it as well -- some blends, especially the named blends (Kamakura, Rikyu, Jizo, Hikari, Satoshi, and Daphne) have extremely limited production. These teas are hard to produce.

No. No sugar, additives, or any other nonsense. It’s 100% extraordinary green tea leaves, ground up into a fine powder.

Location on the tea plant, mainly. Hyperpremium is the baby leaves; we only use the newest growth. Imagine baby vegetables, baby herbs, microgreens. They haven’t had much time to develop much molecular complexity, so there are no bitter or astringent notes, just clean, chlorophyll-packed umami.

Leaves used for coldbrew are slightly older, and have a little more biocomplexity to them. That complexity does add some bitterness and astringency, but it’s undetectable when prepared with ice water, so it tastes rich and creamy. Yields are tiny for the hyperpremium, and yields are bigger with coldbrew (the leaves themselves weigh more, and are larger, hence bigger yields).

This term has lost most of its meaning. Because there is no governing body of any type that monitors/controls what can be labeled ceremonial, anyone can -- and does -- use this moniker to connote quality, even though much of the “ceremonial” matcha on the marketplace is in fact barely culinary -- much of it could be better described as “industrial.”

Moreover, many tea ceremonies in Japan notoriously serve sub-par matcha. In the end, many of the ceremonies aren’t really about tea at all, they’re about choreography and pedigree. Sometimes the teas are tasty, but more often they’re oxidized and bitter and astringent; hallmarks of culinary (or worse) matcha.

Some people insist on organic (generally for good reasons), so we searched hard for years and finally found what we feel is the tastiest and best organic matcha in the domestic Japanese market. However, our conventionally grown matcha is utterly safe, and it tends to taste better because its umami/amino acid structure is more pronounced.
