Best Strainer Ever

Love its double mesh, nothing escapes, using several years, can't be without it, has weight so it won't fall over. ANOTHER WINNER!!!

Perfect for Matcha

I bought another strainer and it was absolutely horrible and part of the stainless steel permanently bent and was unusable after only about a month or so. A total waste of money. This one is of a really high Japanese quality and has held up to months of daily use. It does not bend like the other one did and holds up well when I really clean it with a sponge to get the powder off. I use it as a strainer for non-matcha use like when straining millet as well as when making my own kinako. Absolutely fantastic strainer for various uses. It fits perfectly on top of the matcha cup I have had for years from a different company. The only flaw I can think of is that powder and other materials can get caught pretty easily in the inner layer and thus cleaning it can take more time, but I absolutely recommend this sieve over all the other ones I've had so far. Beautiful look/design is an added bonus. Highly recommended!

well made but slooooow to sieve

This sieve is solid! using it produces very fine matcha powder without clumps. Unfortunately, using it takes time to push the matcha through the mesh pores.

Beautiful Sieve

This sieve is beautiful and sturdy. It does take longer to sift the matcha but it truly worth the extra time. I deducted one star because it does not fit quite right on the container I use for mixing my matcha. The container is from Breakaway but they don’t sell it anymore.

HANDY, SIFTS TO PERFECTION

No more clumps thx to this well made, ultra fine heavy duty sifter. Lip sits on the cup which doesn't move to avoid making a mess. Another excellent handy tool I can't be w/out!!!!

Love this sieve

Love this item, makes a velvet smooth powder, no residue on the sides of the cup as you drink, or on the bottom when finished, matcha remains suspended for the duration of the drink. Have always used a sieve with my matcha but never before had a cup of matcha with no residue left behind after the last sip. Completely happy with this product.

Nice Sieve

This sieve looks great and works great. It has two layers of mesh and gives you a nice fluffy pile. I use it by holding the handle in one hand and tapping the side of the circular part with the side of my hand or fingers. It works much better than my large kitchen sieve I tried before getting this one.

it works

It's the only sieve that I've tried for this purpose so I can't compare it to others, but I can say that it works to make me a better cup of matcha than without it.

Nice Sieve

This sieve takes it up a notch.
The hammering on the handle gives it nice look. It's very sturdy and it definitely makes for a fine powder. It takes a bit of work to get it through but not agonizingly so. As with any sieve, you will have residue on it.

sieve

This is worth the price but you must have patience. There is no residual and the more robust froth is a pleasure to drink. Being dishwasher safe allows for an occasional deeper cleaning in between gentle brushing.

Ethereally smooth matcha!

I'm fairly new to matcha. I bought a flight and a Breakaway matcha kit to try it out, decided to order more of Blend 100, and picked this sieve up on a whim while I was at it. The difference is surprising. Matcha made with the sieve included in the kit is already very smooth, but this is something else again: the suspended powder is nearly imperceptible, with just the faintest trace of velvety texture remaining.

Also, with that hammered handle it's a beautiful tool, and I'm always a sucker for those :)

Hammered sieve

This is an elegant sieve. It takes a little longer to sift but the reward is a finer sift of your matcha. It would be perfect for when you’re going to take your time for a premium ceremonial matcha.

unique sieve

I have been searching for the perfect sieve for my Matcha. This one is the best in its construction and function. The super small apertures formed by the doubled mesh make it the finest sieve I've ever used. The finer I sieve my Matcha, the creamier my result, with less residue. Some sieves don't stay on the cup. this one does. The construction is super strong, stronger than any I've tried. So, it was worth a few more dollars for this contraption. thanks to breakaway for the availability of this product!

Your Questions Answered

Mainly because the farmers and processors care so much; their processes take longer, require more steps, and are just harder. They’re pretty obsessed with producing Japan’s tastiest and healthiest matcha, and we don’t mind paying them well for the extraordinary product they produce. Rarity comes into it as well -- some blends, especially the named blends (Kamakura, Rikyu, Jizo, Hikari, Satoshi, and Daphne) have extremely limited production. These teas are hard to produce.

No. No sugar, additives, or any other nonsense. It’s 100% extraordinary green tea leaves, ground up into a fine powder.

Location on the tea plant, mainly. Hyperpremium is the baby leaves; we only use the newest growth. Imagine baby vegetables, baby herbs, microgreens. They haven’t had much time to develop much molecular complexity, so there are no bitter or astringent notes, just clean, chlorophyll-packed umami.

Leaves used for coldbrew are slightly older, and have a little more biocomplexity to them. That complexity does add some bitterness and astringency, but it’s undetectable when prepared with ice water, so it tastes rich and creamy. Yields are tiny for the hyperpremium, and yields are bigger with coldbrew (the leaves themselves weigh more, and are larger, hence bigger yields).

This term has lost most of its meaning. Because there is no governing body of any type that monitors/controls what can be labeled ceremonial, anyone can -- and does -- use this moniker to connote quality, even though much of the “ceremonial” matcha on the marketplace is in fact barely culinary -- much of it could be better described as “industrial.”

Moreover, many tea ceremonies in Japan notoriously serve sub-par matcha. In the end, many of the ceremonies aren’t really about tea at all, they’re about choreography and pedigree. Sometimes the teas are tasty, but more often they’re oxidized and bitter and astringent; hallmarks of culinary (or worse) matcha.

Some people insist on organic (generally for good reasons), so we searched hard for years and finally found what we feel is the tastiest and best organic matcha in the domestic Japanese market. However, our conventionally grown matcha is utterly safe, and it tends to taste better because its umami/amino acid structure is more pronounced.
